Ingredients

  • Russet potatoes - 300 grams
  • Onion - 1 small (about 100 grams)
  • Egg - 1 large
  • All-purpose flour - 30 grams
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable oil - 100 ml (for frying)
  • Eggs - 2 large (for poaching)
  • White vinegar - 1 tablespoon
  • Butter - 50 grams (for hollandaise)
  • Egg yolk - 1 large (for hollandaise)
  • Lemon juice - 1 tablespoon (for hollandaise)
  • Salt - pinch (for hollandaise)
  • Fresh chives - for garnish

Steps

  1. Peel the russet potatoes and onion. Grate them using a box grater or food processor.
  2. Place the grated potatoes and onion in a clean kitchen towel and squeeze out as much moisture as possible.
  3. In a bowl, combine the grated potatoes, onion, egg, flour, salt, and black pepper. Mix well to form a batter.
  4. Heat vegetable oil in a non-stick skillet over medium heat. Once hot, spoon about 1/4 cup of the latke batter into the skillet for each latke, flattening slightly with a spatula.
  5. Fry the latkes for about 4-5 minutes on each side until golden brown and crispy. Remove and drain on paper towels. Keep warm.
  6. In a separate pot, bring water to a gentle simmer and add the white vinegar.
  7. Crack the eggs into small bowls. Gently slide each egg into the simmering water, cooking for about 3-4 minutes for a soft yolk. Remove with a slotted spoon and drain on paper towels.
  8. In a small saucepan, melt the butter over low heat. In a bowl, whisk together the egg yolk, lemon juice, and a pinch of salt until frothy. Gradually whisk in the melted butter until smooth and creamy.
  9. To assemble, place a latke on each plate, top with a poached egg, and drizzle with hollandaise sauce. Garnish with chopped fresh chives.
