- Dried apricots, chopped - 50 grams
- Chickpeas, canned and drained - 100 grams
- Canned diced tomatoes - 200 grams
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground cinnamon - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro, chopped - 2 tablespoons
- Water - 250 milliliters
Steps
- Heat olive oil in a large pot or tagine over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, cooking for an additional minute until fragrant.
- Add the cubed lamb, browning on all sides for about 8-10 minutes.
- Sprinkle in the ground cumin, cinnamon, coriander, paprika, salt, and black pepper; stir to coat the meat with spices.
- Add the sliced carrot, chopped dried apricots, canned diced tomatoes, and chickpeas to the pot.
- Pour in the water and bring the mixture to a simmer.
- Cover the pot and reduce the heat to low, allowing the tagine to cook for 60 minutes, stirring occasionally.
- After 60 minutes, check the lamb for tenderness; if needed, simmer for an additional 10-15 minutes until the lamb is fork-tender.
