  • Lamb shoulder, cubed - 300 grams
  • Onion, finely chopped - 1 medium
  • Garlic, minced - 3 cloves
  • Carrot, sliced - 1 medium
  • Dried apricots, chopped - 50 grams
  • Chickpeas, canned and drained - 100 grams
  • Canned diced tomatoes - 200 grams
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground cinnamon - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro, chopped - 2 tablespoons
  • Water - 250 milliliters

Steps

  1. Heat olive oil in a large pot or tagine over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic, cooking for an additional minute until fragrant.
  4. Add the cubed lamb, browning on all sides for about 8-10 minutes.
  5. Sprinkle in the ground cumin, cinnamon, coriander, paprika, salt, and black pepper; stir to coat the meat with spices.
  6. Add the sliced carrot, chopped dried apricots, canned diced tomatoes, and chickpeas to the pot.
  7. Pour in the water and bring the mixture to a simmer.
  8. Cover the pot and reduce the heat to low, allowing the tagine to cook for 60 minutes, stirring occasionally.
  9. After 60 minutes, check the lamb for tenderness; if needed, simmer for an additional 10-15 minutes until the lamb is fork-tender.
