Ingredients

  • Ground lamb - 500 grams
  • Onion, grated - 1 small (about 50 grams)
  • Garlic, minced - 2 cloves
  • Fresh parsley, chopped - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Cinnamon - ¼ teaspoon
  • Olive oil - 1 tablespoon (for grilling)
  • Skewers - 4 (if using wooden skewers, soak in water for 30 minutes)
  • Plain yogurt - 150 grams
  • Lemon juice - 1 tablespoon
  • Cucumber, finely chopped - 50 grams
  • Salt (for yogurt sauce) - to taste

Steps

  1. In a large bowl, combine the ground lamb, grated onion, minced garlic, chopped parsley, cumin, coriander, paprika, salt, black pepper, and cinnamon. Mix well until thoroughly combined.
  2. Divide the lamb mixture into 4 equal portions and shape each portion around a skewer into a cylindrical form, ensuring they are compact and evenly shaped.
  3. Preheat a grill or grill pan over medium-high heat and brush with olive oil.
  4. Place the skewers on the grill and cook for about 4-5 minutes on each side, or until the lamb is cooked through and slightly charred.
  5. While the kebabs are grilling, prepare the yogurt sauce by mixing together the plain yogurt, lemon juice, chopped cucumber, and a pinch of salt in a small bowl. Adjust seasoning to taste.
  6. Once the kebabs are cooked, remove them from the grill and let them rest for a few minutes before serving.
