- Ground lamb - 500 grams
- Onion, grated - 1 small (about 50 grams)
- Garlic, minced - 2 cloves
- Fresh parsley, chopped - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - ½ teaspoon
- Cinnamon - ¼ teaspoon
- Olive oil - 1 tablespoon (for grilling)
- Skewers - 4 (if using wooden skewers, soak in water for 30 minutes)
- Plain yogurt - 150 grams
- Lemon juice - 1 tablespoon
- Cucumber, finely chopped - 50 grams
- Salt (for yogurt sauce) - to taste
Steps
- In a large bowl, combine the ground lamb, grated onion, minced garlic, chopped parsley, cumin, coriander, paprika, salt, black pepper, and cinnamon. Mix well until thoroughly combined.
- Divide the lamb mixture into 4 equal portions and shape each portion around a skewer into a cylindrical form, ensuring they are compact and evenly shaped.
- Preheat a grill or grill pan over medium-high heat and brush with olive oil.
- Place the skewers on the grill and cook for about 4-5 minutes on each side, or until the lamb is cooked through and slightly charred.
- While the kebabs are grilling, prepare the yogurt sauce by mixing together the plain yogurt, lemon juice, chopped cucumber, and a pinch of salt in a small bowl. Adjust seasoning to taste.
- Once the kebabs are cooked, remove them from the grill and let them rest for a few minutes before serving.
