Ingredients

  • Lamb chops - 4 pieces (approximately 500g)
  • Olive oil - 2 tablespoons
  • Fresh rosemary - 2 sprigs, chopped
  • Fresh thyme - 2 sprigs, chopped
  • Garlic - 2 cloves, minced
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Garlic mashed potatoes - 300g (for serving)

Steps

  1. In a bowl, whisk together the olive oil, chopped rosemary, chopped thyme, minced garlic, lemon juice, salt, and black pepper to create a marinade.
  2. Place the lamb chops in a resealable plastic bag or shallow dish and pour the marinade over them, ensuring they are well coated. Seal or cover and refrigerate for at least 15 minutes (up to 2 hours for more flavor).
  3. Preheat a grill or grill pan over medium-high heat.
  4. Remove the lamb chops from the marinade and let any excess drip off. Discard the marinade.
  5. Grill the lamb chops for about 4-5 minutes on each side for medium-rare, or until they reach your desired doneness.
  6. While the lamb is grilling, prepare the garlic mashed potatoes according to package instructions or your preferred method.
  7. Serve the grilled lamb chops with a side of garlic mashed potatoes, garnished with additional herbs if desired.
