- Almond flour - 1 cup
- Arrowroot powder - 1/4 cup
- Egg - 1 large
- Garlic powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Fresh sage - 5 leaves, chopped
- Vegetable broth - 1/2 cup
Steps
- In a large bowl, combine pumpkin puree, almond flour, arrowroot powder, egg, garlic powder, salt, and black pepper. Mix until a dough forms.
- Turn the dough out onto a lightly floured surface (using almond flour) and knead gently until smooth, about 2-3 minutes.
- Divide the dough into four portions. Roll each portion into a long rope, about 1/2 inch thick, then cut into 1-inch pieces to form the gnocchi.
- Bring a pot of salted water to a boil. Carefully drop the gnocchi into the boiling water and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.
- In a large skillet, heat olive oil over medium heat. Add the chopped sage and sauté for 1-2 minutes until fragrant.
- Add the cooked gnocchi to the skillet and toss to coat in the sage oil. Pour in the vegetable broth and let simmer for another 2-3 minutes to warm through.
