  • Almond flour - 1 cup
  • Arrowroot powder - 1/4 cup
  • Egg - 1 large
  • Garlic powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Fresh sage - 5 leaves, chopped
  • Vegetable broth - 1/2 cup

Steps

  1. In a large bowl, combine pumpkin puree, almond flour, arrowroot powder, egg, garlic powder, salt, and black pepper. Mix until a dough forms.
  2. Turn the dough out onto a lightly floured surface (using almond flour) and knead gently until smooth, about 2-3 minutes.
  3. Divide the dough into four portions. Roll each portion into a long rope, about 1/2 inch thick, then cut into 1-inch pieces to form the gnocchi.
  4. Bring a pot of salted water to a boil. Carefully drop the gnocchi into the boiling water and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.
  5. In a large skillet, heat olive oil over medium heat. Add the chopped sage and sauté for 1-2 minutes until fragrant.
  6. Add the cooked gnocchi to the skillet and toss to coat in the sage oil. Pour in the vegetable broth and let simmer for another 2-3 minutes to warm through.
  7. Serve immediately, garnished with additional sage if desired.
