Ingredients

  • Egg noodles - 100 grams
  • Eggs - 2 large
  • Sour cream - 120 ml
  • Cream cheese - 50 grams, softened
  • Onion - 1 small, finely chopped
  • Garlic - 1 clove, minced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Paprika - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Cook the egg noodles according to package instructions until al dente, then drain and set aside.
  3. In a skillet, heat the olive oil over medium heat and sauté the chopped onion and garlic until translucent, about 3-4 minutes.
  4. In a large bowl, whisk together the eggs, sour cream, and softened cream cheese until smooth.
  5. Add the cooked noodles, sautéed onion and garlic, salt, black pepper, and paprika to the egg mixture. Stir until well combined.
  6. Grease two muffin cups or ramekins with a little olive oil or cooking spray.
  7. Divide the noodle mixture evenly between the prepared cups, pressing down slightly to compact the mixture.
  8. Bake in the preheated oven for 25-30 minutes, or until the tops are lightly golden and a toothpick inserted in the center comes out clean.
  9. Allow to cool for a few minutes before carefully removing the kugel cups from the muffin tin.
  10. Garnish with chopped fresh parsley before serving.
