Ingredients
- Egg noodles - 100 grams
- Eggs - 2 large
- Sour cream - 120 ml
- Cream cheese - 50 grams, softened
- Onion - 1 small, finely chopped
- Garlic - 1 clove, minced
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Paprika - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Preheat your oven to 180°C (350°F).
- Cook the egg noodles according to package instructions until al dente, then drain and set aside.
- In a skillet, heat the olive oil over medium heat and sauté the chopped onion and garlic until translucent, about 3-4 minutes.
- In a large bowl, whisk together the eggs, sour cream, and softened cream cheese until smooth.
- Add the cooked noodles, sautéed onion and garlic, salt, black pepper, and paprika to the egg mixture. Stir until well combined.
- Grease two muffin cups or ramekins with a little olive oil or cooking spray.
- Divide the noodle mixture evenly between the prepared cups, pressing down slightly to compact the mixture.
- Bake in the preheated oven for 25-30 minutes, or until the tops are lightly golden and a toothpick inserted in the center comes out clean.
- Allow to cool for a few minutes before carefully removing the kugel cups from the muffin tin.
- Garnish with chopped fresh parsley before serving.
