- All-purpose flour - 1 cup (120 grams)
- Water - 1/4 cup (60 ml)
- Beef broth - 4 cups (1 liter)
- Carrot, sliced - 1 medium (about 70 grams)
- Celery, sliced - 1 stalk (about 50 grams)
- Bay leaf - 1
- Olive oil - 1 tablespoon
Steps
- In a skillet, heat olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes. Add minced garlic and ground beef, cooking until browned. Stir in parsley, salt, and black pepper, then remove from heat.
- In a mixing bowl, combine flour and salt. Create a well in the center and add the egg and water. Mix until a dough forms, then knead gently for about 5 minutes until smooth. Wrap in plastic wrap and let rest for 20 minutes.
- Roll out the dough on a floured surface to about 1/8 inch thickness. Cut into 3-inch squares. Place a teaspoon of the meat mixture in the center of each square, fold diagonally to form a triangle, and pinch edges to seal.
- In a large pot, bring beef broth to a boil. Add sliced carrots, celery, and bay leaf. Reduce heat to simmer and cook for 10 minutes.
- Add the kreplach to the soup and cook for an additional 10-15 minutes until the dumplings float to the surface and are cooked through.
- Remove bay leaf before serving. Taste and adjust seasoning if necessary. Serve hot, garnished with additional parsley if desired.
