Ingredients
- all-purpose flour - 1 cup (120g)
- salt - 1/2 teaspoon
- unsalted butter - 1/4 cup (60g), cold and cubed
- cold water - 3 tablespoons
- potatoes - 2 medium (300g), peeled and cubed
- onion - 1 small, diced
- vegetable oil - 1 tablespoon
- black pepper - 1/2 teaspoon
- garlic powder - 1/4 teaspoon
- egg - 1, beaten (for egg wash)
Steps
- In a large mixing bowl, combine the flour and salt. Add the cold butter and mix until the mixture resembles coarse crumbs.
- Add the cold water, one tablespoon at a time, mixing until the dough comes together. Wrap in plastic wrap and refrigerate for 30 minutes.
- While the dough chills, boil the cubed potatoes in salted water until tender, about 15 minutes. Drain and mash until smooth.
- In a skillet, heat the vegetable oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Mix the sautéed onion into the mashed potatoes along with black pepper and garlic powder. Allow to cool.
- Preheat the oven to 200°C (400°F).
- On a floured surface, roll out the chilled dough to about 1/8-inch thickness. Cut into 4-inch circles using a cookie cutter or a glass.
- Place a spoonful of the potato filling in the center of each circle. Fold the dough over to create a pocket, sealing the edges by crimping with a fork.
- Transfer the knish pockets to a baking sheet lined with parchment paper. Brush the tops with the beaten egg.
- Bake in the preheated oven for 20-25 minutes, or until golden brown. Serve warm.
