Ingredients

  • all-purpose flour - 1 cup (120g)
  • salt - 1/2 teaspoon
  • unsalted butter - 1/4 cup (60g), cold and cubed
  • cold water - 3 tablespoons
  • potatoes - 2 medium (300g), peeled and cubed
  • onion - 1 small, diced
  • vegetable oil - 1 tablespoon
  • black pepper - 1/2 teaspoon
  • garlic powder - 1/4 teaspoon
  • egg - 1, beaten (for egg wash)

Steps

  1. In a large mixing bowl, combine the flour and salt. Add the cold butter and mix until the mixture resembles coarse crumbs.
  2. Add the cold water, one tablespoon at a time, mixing until the dough comes together. Wrap in plastic wrap and refrigerate for 30 minutes.
  3. While the dough chills, boil the cubed potatoes in salted water until tender, about 15 minutes. Drain and mash until smooth.
  4. In a skillet, heat the vegetable oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Mix the sautéed onion into the mashed potatoes along with black pepper and garlic powder. Allow to cool.
  5. Preheat the oven to 200°C (400°F).
  6. On a floured surface, roll out the chilled dough to about 1/8-inch thickness. Cut into 4-inch circles using a cookie cutter or a glass.
  7. Place a spoonful of the potato filling in the center of each circle. Fold the dough over to create a pocket, sealing the edges by crimping with a fork.
  8. Transfer the knish pockets to a baking sheet lined with parchment paper. Brush the tops with the beaten egg.
  9. Bake in the preheated oven for 20-25 minutes, or until golden brown. Serve warm.
