Ingredients
- All-purpose flour - 200 grams
- Unsalted butter - 100 grams, softened
- Egg - 1 large
- Water - 50 ml
- Salt - 1 teaspoon
- Potatoes - 200 grams, peeled and cubed
- Onion - 1 medium, finely chopped
- Olive oil - 1 tablespoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
Steps
- In a large bowl, combine the flour and salt. Add the softened butter and mix until the mixture resembles coarse crumbs.
- In a separate bowl, whisk together the egg and water. Gradually add this to the flour mixture, mixing until a dough forms. Knead gently until smooth, cover with plastic wrap, and refrigerate for 30 minutes.
- While the dough is chilling, cook the potatoes in a pot of boiling salted water until tender, about 15 minutes. Drain and mash them in a bowl.
- In a skillet, heat the olive oil over medium heat. Sauté the chopped onion until golden brown, about 5-7 minutes. Add the sautéed onions to the mashed potatoes and season with black pepper and paprika. Mix well and let cool.
- Preheat the oven to 180°C (350°F).
- Roll out the chilled dough on a floured surface to about 3mm thickness. Cut into 10 cm squares.
- Place a tablespoon of the potato filling in the center of each square. Fold the corners over the filling and pinch to seal tightly.
- Place the knishes on a baking sheet lined with parchment paper. Brush the tops with a beaten egg for a golden finish.
- Bake in the preheated oven for 25-30 minutes or until golden brown. Remove from the oven and let cool slightly before serving.
