Ingredients

  • Brown rice - 1/2 cup (90g)
  • Almond milk - 2 cups (480ml)
  • Honey - 2 tablespoons (30g)
  • Cardamom powder - 1/2 teaspoon (1g)
  • Vanilla extract - 1 teaspoon (5ml)
  • Chopped almonds - 2 tablespoons (15g)
  • Raisins - 2 tablespoons (30g)
  • Cinnamon powder - 1/4 teaspoon (1g)
  • Salt - a pinch

Steps

  1. Rinse the brown rice under cold water until the water runs clear, then drain.
  2. In a medium saucepan, combine the rinsed rice and almond milk. Bring to a boil over medium heat.
  3. Once boiling, reduce the heat to low and simmer uncovered for about 20-25 minutes, or until the rice is tender and the mixture thickens, stirring occasionally.
  4. Add honey, cardamom powder, vanilla extract, and a pinch of salt. Stir well to combine and cook for an additional 2-3 minutes.
  5. Remove from heat and let it sit for a few minutes to thicken further.
  6. Serve warm or chilled, garnished with chopped almonds, raisins, and a sprinkle of cinnamon.
