Ingredients

  • Brown rice - 1 cup (cooked)
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Frozen peas - 1/2 cup
  • Egg - 2 large, beaten
  • Soy sauce - 2 tablespoons
  • Green onions - 2, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Stir in diced carrots and bell pepper, cooking for 5 minutes until softened.
  4. Add frozen peas and cook for another 2 minutes.
  5. Push the vegetables to one side of the skillet and add the remaining tablespoon of olive oil to the empty side.
  6. Pour in the beaten eggs and scramble until fully cooked, then mix with the vegetables.
  7. Add the cooked brown rice to the skillet, followed by soy sauce, salt, and black pepper.
  8. Stir everything together, cooking for an additional 5 minutes to heat through.
  9. Finish by adding chopped green onions, stirring well before serving.
