  • Celery - 2 stalks, diced
  • Zucchini - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Cauliflower florets - 1 cup
  • Spinach - 2 cups, fresh
  • Vegetable broth - 4 cups (low sodium)
  • Dried oregano - 1 teaspoon
  • Dried thyme - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the minced garlic and diced onion, sautéing until the onion becomes translucent, about 3-5 minutes.
