- Almond flour - 1/4 cup
- Erythritol - 2 tablespoons
- Baking powder - 1/2 teaspoon
- Egg - 1 large, separated
- Vanilla extract - 1/2 teaspoon
- Coffee - 1/2 cup, brewed and cooled
- Mascarpone cheese - 1/2 cup
- Heavy cream - 1/4 cup
- Cocoa powder - 1 tablespoon, unsweetened
- Salt - a pinch
Steps
- Preheat your oven to 180°C (350°F).
- In a bowl, mix almond flour, erythritol, baking powder, and a pinch of salt.
- In a separate bowl, beat the egg white until soft peaks form.
- In another bowl, whisk the egg yolk, vanilla extract, and the dry mixture until smooth. Gently fold in the egg white until combined.
- Pour the batter into a lined small baking dish and bake for 10-12 minutes until golden brown. Let it cool completely.
- Once the cake is cool, cut it into 2 equal rectangles and soak them in the brewed coffee for a few seconds on each side.
- In a mixing bowl, combine mascarpone cheese and heavy cream. Whip until soft peaks form.
- Layer half of the soaked cake in serving dishes, add half of the mascarpone mixture, then repeat with the remaining cake and mascarpone.
- Dust the top with cocoa powder and refrigerate for at least 2 hours before serving.
