Ingredients

  • Cauliflower - 400 grams
  • Fresh Thai basil leaves - 30 grams
  • Coconut oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Shallot - 1 small, finely chopped
  • Red bell pepper - 1 medium, diced
  • Soy sauce (or tamari for gluten-free) - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Red chili flakes - 1/2 teaspoon (adjust to taste)
  • Salt - to taste
  • Pepper - to taste
  • Spring onions - 2, chopped (for garnish)

Steps

  1. Begin by preparing the cauliflower. Remove the leaves and stem, then cut it into florets. Using a food processor, pulse the cauliflower florets until they resemble rice grains. Set aside.
  2. In a large skillet, heat the coconut oil over medium heat. Add the minced garlic and chopped shallot, and sauté for about 2-3 minutes until fragrant and translucent.
  3. Add the diced red bell pepper to the skillet and cook for another 2-3 minutes until softened.
  4. Stir in the riced cauliflower, soy sauce, fish sauce, lime juice, red chili flakes, salt, and pepper. Cook for 5-7 minutes, stirring occasionally, until the cauliflower is tender and heated through.
  5. Remove the skillet from heat and gently fold in the fresh Thai basil leaves until they wilt slightly.
  6. Serve hot, garnished with chopped spring onions.
