Ingredients

  • Chicken breast - 300 grams
  • Soy sauce (or tamari for gluten-free) - 60 ml
  • Apple cider vinegar - 15 ml
  • Erythritol (or preferred keto sweetener) - 2 tablespoons
  • Garlic, minced - 2 cloves
  • Ginger, minced - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Green onions, chopped - 2 tablespoons
  • Sesame seeds - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a bowl, combine soy sauce, apple cider vinegar, erythritol, minced garlic, minced ginger, and sesame oil to create the teriyaki marinade.
  2. Cut the chicken breast into bite-sized pieces and add it to the marinade, ensuring the chicken is well coated. Let it marinate for at least 15 minutes.
  3. Heat olive oil in a non-stick skillet over medium heat.
  4. Add the marinated chicken to the skillet, discarding the leftover marinade. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.
  5. Once cooked, sprinkle with chopped green onions and sesame seeds before serving.
  6. Serve hot, garnished with extra green onions and sesame seeds if desired.
