Ingredients

  • Ground beef - 250 grams
  • Olive oil - 1 tablespoon
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Bell pepper - 1 small, diced
  • Taco seasoning - 2 tablespoons
  • Diced tomatoes - 200 grams, drained
  • Cream cheese - 100 grams, softened
  • Shredded cheddar cheese - 100 grams
  • Eggs - 2 large
  • Sour cream - 50 grams
  • Salt - to taste
  • Pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, and sauté until softened, about 3-4 minutes.
  3. Add the minced garlic and ground beef to the skillet. Cook until the beef is browned, breaking it apart with a spoon, about 5-7 minutes.
  4. Stir in the taco seasoning and drained diced tomatoes. Cook for an additional 2-3 minutes until heated through. Season with salt and pepper to taste.
  5. In a bowl, mix the softened cream cheese and sour cream until smooth. Then, beat in the eggs until fully combined.
  6. In a greased 8x8 inch baking dish, layer the beef mixture evenly on the bottom. Pour the cream cheese mixture over the beef, spreading it out evenly.
  7. Sprinkle the shredded cheddar cheese on top of the casserole.
  8. Bake in the preheated oven for 15-20 minutes, or until the top is golden and bubbly.
  9. Remove from the oven and let it cool for a few minutes. Garnish with fresh cilantro before serving.
