Ingredients
- Ground beef - 250 grams
- Olive oil - 1 tablespoon
- Onion - 50 grams, diced
- Garlic - 2 cloves, minced
- Bell pepper - 50 grams, diced
- Taco seasoning - 2 tablespoons
- Cauliflower rice - 200 grams
- Cream cheese - 100 grams
- Shredded cheddar cheese - 100 grams
- Sour cream - 2 tablespoons
- Chopped green onions - 2 tablespoons
- Fresh cilantro - for garnish
- Salt - to taste
- Pepper - to taste
Steps
- Preheat the oven to 180°C (350°F).
- In a large skillet, heat olive oil over medium heat. Add diced onion and bell pepper, and sauté until softened, about 3-4 minutes.
- Add minced garlic and ground beef to the skillet. Cook until the beef is browned, breaking it apart with a spatula, about 5-7 minutes.
- Stir in taco seasoning, cauliflower rice, salt, and pepper. Cook for another 5 minutes until the cauliflower is tender.
- Remove the skillet from heat and mix in cream cheese until fully combined.
- Transfer the beef mixture into a greased baking dish and spread it evenly.
- Top with shredded cheddar cheese and bake in the preheated oven for 15 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool slightly. Drizzle with sour cream and sprinkle with chopped green onions and cilantro before serving.
