Ingredients

  • Ground beef - 250 grams
  • Olive oil - 1 tablespoon
  • Onion - 50 grams, diced
  • Garlic - 2 cloves, minced
  • Bell pepper - 50 grams, diced
  • Taco seasoning - 2 tablespoons
  • Cauliflower rice - 200 grams
  • Cream cheese - 100 grams
  • Shredded cheddar cheese - 100 grams
  • Sour cream - 2 tablespoons
  • Chopped green onions - 2 tablespoons
  • Fresh cilantro - for garnish
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and bell pepper, and sauté until softened, about 3-4 minutes.
  3. Add minced garlic and ground beef to the skillet. Cook until the beef is browned, breaking it apart with a spatula, about 5-7 minutes.
  4. Stir in taco seasoning, cauliflower rice, salt, and pepper. Cook for another 5 minutes until the cauliflower is tender.
  5. Remove the skillet from heat and mix in cream cheese until fully combined.
  6. Transfer the beef mixture into a greased baking dish and spread it evenly.
  7. Top with shredded cheddar cheese and bake in the preheated oven for 15 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and let cool slightly. Drizzle with sour cream and sprinkle with chopped green onions and cilantro before serving.
