- 2 medium zucchini
- 250g ground beef
- 50g cream cheese, softened
- 50g shredded mozzarella cheese
- 1 clove garlic, minced
- 1/2 teaspoon onion powder
- 1/2 teaspoon Italian seasoning
- Salt - to taste
- Black pepper - to taste
- 2 tablespoons olive oil
- 30g grated Parmesan cheese
Steps
- Preheat your oven to 190°C (375°F).
- Wash the zucchini and slice them in half lengthwise. Scoop out the insides using a spoon to create boats, leaving about 1 cm of flesh around the edges.
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Add ground beef to the skillet and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
- Stir in the scooped-out zucchini flesh, cream cheese, mozzarella cheese, onion powder, Italian seasoning, salt, and pepper. Cook for an additional 3-4 minutes until well combined and heated through.
- Fill each zucchini boat with the beef mixture and place them in a baking dish.
- Sprinkle grated Parmesan cheese on top of the stuffed zucchinis.
- Bake in the preheated oven for 15-20 minutes, until the zucchini is tender and the cheese is melted and golden.
- Remove from the oven and let cool for a few minutes before serving.
