Ingredients

  • 2 large bell peppers (any color)
  • 225 grams ground beef (80% lean)
  • 60 grams shredded cheddar cheese
  • 1/2 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons tomato sauce (sugar-free)

Steps

  1. Preheat the oven to 190°C (375°F).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Brush the outsides with olive oil and set aside.
  3. In a skillet over medium heat, add 2 tablespoons of olive oil, then sauté the chopped onion and minced garlic until translucent.
  4. Add the ground beef to the skillet and cook until browned. Drain any excess fat.
  5. Stir in the chili powder, cumin, salt, pepper, and tomato sauce. Mix well and remove from heat.
  6. Stir in 30 grams of shredded cheddar cheese until melted and evenly distributed.
  7. Stuff each bell pepper with the beef mixture, pressing down to pack it in.
  8. Place the stuffed peppers in a baking dish and sprinkle the remaining cheddar cheese on top.
  9. Bake in the preheated oven for 25-30 minutes, or until the peppers are tender and the cheese is bubbly and golden.
  10. Remove from the oven and let cool for a few minutes before serving.
