Ingredients
- 2 large bell peppers (any color)
- 225 grams ground beef (80% lean)
- 60 grams shredded cheddar cheese
- 1/2 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 2 tablespoons olive oil
- 2 tablespoons tomato sauce (sugar-free)
Steps
- Preheat the oven to 190°C (375°F).
- Cut the tops off the bell peppers and remove the seeds and membranes. Brush the outsides with olive oil and set aside.
- In a skillet over medium heat, add 2 tablespoons of olive oil, then sauté the chopped onion and minced garlic until translucent.
- Add the ground beef to the skillet and cook until browned. Drain any excess fat.
- Stir in the chili powder, cumin, salt, pepper, and tomato sauce. Mix well and remove from heat.
- Stir in 30 grams of shredded cheddar cheese until melted and evenly distributed.
- Stuff each bell pepper with the beef mixture, pressing down to pack it in.
- Place the stuffed peppers in a baking dish and sprinkle the remaining cheddar cheese on top.
- Bake in the preheated oven for 25-30 minutes, or until the peppers are tender and the cheese is bubbly and golden.
- Remove from the oven and let cool for a few minutes before serving.
