Ingredients

  • Yellow squash - 300 grams, sliced
  • Zucchini - 200 grams, sliced
  • Cream cheese - 100 grams, softened
  • Shredded cheddar cheese - 100 grams
  • Egg - 1 large
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Almond flour - 2 tablespoons
  • Parmesan cheese - 30 grams, grated

Steps

  1. Preheat the oven to 190°C (375°F).
  2. In a large skillet, heat olive oil over medium heat and sauté the sliced yellow squash and zucchini for about 5-7 minutes until slightly softened.
  3. In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, egg, garlic powder, onion powder, salt, and black pepper. Mix until smooth.
  4. Add the sautéed squash and zucchini to the cheese mixture and stir until well combined.
  5. Transfer the mixture to a greased baking dish (approximately 20x20 cm) and smooth the top.
  6. Sprinkle almond flour and grated Parmesan cheese evenly over the top of the casserole.
  7. Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
  8. Allow to cool for a few minutes before serving.
