Ingredients
- Yellow squash - 300 grams, sliced
- Zucchini - 200 grams, sliced
- Cream cheese - 100 grams, softened
- Shredded cheddar cheese - 100 grams
- Egg - 1 large
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Almond flour - 2 tablespoons
- Parmesan cheese - 30 grams, grated
Steps
- Preheat the oven to 190°C (375°F).
- In a large skillet, heat olive oil over medium heat and sauté the sliced yellow squash and zucchini for about 5-7 minutes until slightly softened.
- In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, egg, garlic powder, onion powder, salt, and black pepper. Mix until smooth.
- Add the sautéed squash and zucchini to the cheese mixture and stir until well combined.
- Transfer the mixture to a greased baking dish (approximately 20x20 cm) and smooth the top.
- Sprinkle almond flour and grated Parmesan cheese evenly over the top of the casserole.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
- Allow to cool for a few minutes before serving.
