- Coconut flour - 20 grams

- Cinnamon - 1 teaspoon
- Erythritol - 60 grams
- Salt - 1/4 teaspoon
- Unsalted butter - 60 grams, softened
- Egg - 1 large
- Vanilla extract - 1 teaspoon
- Cinnamon and erythritol mixture (for rolling) - 1 tablespoon each
Steps
- Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a mixing bowl, combine almond flour, coconut flour, baking powder, cinnamon, erythritol, and salt. Mix well.
- In another bowl, cream the softened butter and remaining erythritol until light and fluffy.
- Add the egg and vanilla extract to the butter mixture and mix until fully incorporated.
- Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
- Scoop out about 1 tablespoon of dough and roll it into a ball.
- In a small bowl, combine the cinnamon and erythritol for rolling, then roll each dough ball in this mixture.
- Place the rolled dough balls on the prepared baking sheet, spacing them about 2 inches apart.
- Flatten each ball slightly with your fingers or the bottom of a glass.
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
