Ingredients
- Shrimp (peeled and deveined) - 300 grams
- Zucchini (spiralized) - 2 medium
- Garlic (minced) - 4 cloves
- Butter - 60 grams
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Parmesan cheese (grated) - 30 grams
- Fresh parsley (chopped) - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Red pepper flakes - 1/4 teaspoon (optional)
Steps
- Heat olive oil and 30 grams of butter in a large skillet over medium heat until melted.
- Add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- Increase the heat to medium-high, then add the shrimp to the skillet. Season with salt, black pepper, and red pepper flakes (if using).
- Cook the shrimp for about 2-3 minutes on each side until they turn pink and opaque, then remove them from the skillet and set aside.
- In the same skillet, add the spiralized zucchini and sauté for 2-3 minutes until slightly tender.
- Return the shrimp to the skillet, then add lemon juice, the remaining butter, and half of the parsley. Toss everything together to combine and heat through for about 1 minute.
- Serve hot, garnished with the remaining parsley and grated Parmesan cheese.
