Ingredients

  • Shrimp (peeled and deveined) - 300 grams
  • Zucchini (spiralized) - 2 medium
  • Garlic (minced) - 4 cloves
  • Butter - 60 grams
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Parmesan cheese (grated) - 30 grams
  • Fresh parsley (chopped) - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - 1/4 teaspoon (optional)

Steps

  1. Heat olive oil and 30 grams of butter in a large skillet over medium heat until melted.
  2. Add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Increase the heat to medium-high, then add the shrimp to the skillet. Season with salt, black pepper, and red pepper flakes (if using).
  4. Cook the shrimp for about 2-3 minutes on each side until they turn pink and opaque, then remove them from the skillet and set aside.
  5. In the same skillet, add the spiralized zucchini and sauté for 2-3 minutes until slightly tender.
  6. Return the shrimp to the skillet, then add lemon juice, the remaining butter, and half of the parsley. Toss everything together to combine and heat through for about 1 minute.
  7. Serve hot, garnished with the remaining parsley and grated Parmesan cheese.
