  • Cauliflower rice - 2 cups
  • Shrimp, peeled and deveined - 200 grams
  • Eggs - 2 large
  • Green onions, chopped - 2 tablespoons
  • Bell pepper, diced - 1/2 cup
  • Garlic, minced - 2 cloves
  • Soy sauce (or coconut aminos) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Peas (optional, for garnish) - 1/4 cup

Steps

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and diced bell pepper; sauté for 2-3 minutes until softened.
  3. Push the vegetables to one side of the skillet and crack the eggs into the other side, scrambling them until fully cooked.
  4. Add the shrimp to the skillet and cook for 3-4 minutes until they turn pink and opaque.
