- Shrimp, peeled and deveined - 300 grams
- Zucchini, sliced - 2 medium (about 300 grams)
- Garlic, minced - 3 cloves
- Butter - 2 tablespoons (30 grams)
- Olive oil - 1 tablespoon (15 ml)
- Lemon juice - 1 tablespoon (15 ml)
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley, chopped - 2 tablespoons
Steps
- Heat the olive oil and 1 tablespoon of butter in a large skillet over medium heat.
- Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the shrimp to the skillet, season with paprika, salt, and black pepper, and cook for 3-4 minutes until the shrimp turn pink.
- Remove the shrimp from the skillet and set aside.
- In the same skillet, add the sliced zucchini and sauté for 4-5 minutes until tender but still crisp.
- Return the shrimp to the skillet, add the lemon juice, remaining butter, and chopped parsley. Toss everything to combine and heat through for another 1-2 minutes.
- Serve immediately, garnished with extra parsley if desired.
