Ingredients

  • Shrimp, peeled and deveined - 300 grams
  • Zucchini, sliced - 2 medium (about 300 grams)
  • Garlic, minced - 3 cloves
  • Butter - 2 tablespoons (30 grams)
  • Olive oil - 1 tablespoon (15 ml)
  • Lemon juice - 1 tablespoon (15 ml)
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley, chopped - 2 tablespoons

Steps

  1. Heat the olive oil and 1 tablespoon of butter in a large skillet over medium heat.
  2. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the shrimp to the skillet, season with paprika, salt, and black pepper, and cook for 3-4 minutes until the shrimp turn pink.
  4. Remove the shrimp from the skillet and set aside.
  5. In the same skillet, add the sliced zucchini and sauté for 4-5 minutes until tender but still crisp.
  6. Return the shrimp to the skillet, add the lemon juice, remaining butter, and chopped parsley. Toss everything to combine and heat through for another 1-2 minutes.
  7. Serve immediately, garnished with extra parsley if desired.
