Ingredients

  • Shrimp (peeled and deveined) - 250 grams
  • Fresh spinach - 200 grams
  • Avocado - 1 medium
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Garlic (minced) - 1 clove
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Feta cheese (crumbled) - 50 grams
  • Cherry tomatoes (halved) - 100 grams

Steps

  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat.
  2. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the shrimp to the skillet and season with salt and black pepper. Cook for 2-3 minutes on each side until pink and opaque.
