Ingredients

  • Cauliflower - 400g
  • Butter - 30g
  • Heavy cream - 60ml
  • Cream cheese - 30g
  • Shrimp (peeled and deveined) - 250g
  • Garlic (minced) - 2 cloves
  • Chicken broth - 120ml
  • Cheddar cheese (shredded) - 50g
  • Olive oil - 1 tablespoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley (chopped) - for garnish

Steps

  1. Cut the cauliflower into florets and steam until soft, about 10-15 minutes.
  2. In a blender, combine the steamed cauliflower, butter, heavy cream, cream cheese, salt, and pepper. Blend until smooth and creamy, then stir in the cheddar cheese until melted. Set aside.
  3. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  4. Add the shrimp to the skillet and season with paprika, salt, and pepper. Cook for about 3-4 minutes until the shrimp are pink and opaque.
  5. Pour in the chicken broth and let it simmer for an additional 2-3 minutes to combine flavors.
  6. To serve, spoon the cauliflower grits onto plates and top with the shrimp mixture. Garnish with chopped parsley.
