Ingredients
- Shrimp (peeled and deveined) - 300 grams
- Carrots (sliced thinly) - 2 medium (about 200 grams)
- Olive oil - 2 tablespoons
- Garlic (minced) - 2 cloves
- Dried thyme - 1 teaspoon
- Dried oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Parmesan cheese (grated) - 30 grams
- Fresh parsley (chopped) - 2 tablespoons (for garnish)
Steps
- Preheat the oven to 200°C (400°F).
- In a large mixing bowl, combine the sliced carrots, olive oil, minced garlic, dried thyme, dried oregano, salt, and black pepper. Toss until the carrots are well coated.
- Spread the seasoned carrots evenly in a baking dish and roast in the preheated oven for 15 minutes.
- While the carrots are roasting, prepare the shrimp by tossing them with a little olive oil, salt, and pepper in a separate bowl.
- After 15 minutes, remove the baking dish from the oven and stir the carrots. Add the seasoned shrimp on top of the carrots.
- Sprinkle the grated Parmesan cheese over the shrimp and carrots.
- Return the dish to the oven and bake for an additional 10-12 minutes, or until the shrimp are opaque and cooked through.
- Remove from the oven and garnish with fresh parsley before serving.
