- Pork shoulder - 500 grams
- Olive oil - 2 tablespoons
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Sugar-free barbecue sauce - 100 grams
- Apple cider vinegar - 2 tablespoons
- Water - 250 ml
Steps
- Preheat your oven to 150°C (300°F).
- In a small bowl, mix together garlic powder, onion powder, smoked paprika, cumin, salt, and black pepper.
- Rub the spice mixture all over the pork shoulder, ensuring it's evenly coated.
- In a large oven-safe pot or Dutch oven, heat olive oil over medium-high heat and sear the pork shoulder on all sides until browned.
- Remove the pork from the pot and set aside. Add water, apple cider vinegar, and 50 grams of sugar-free barbecue sauce to the pot, scraping up any browned bits from the bottom.
- Return the pork shoulder to the pot, cover with a lid, and place it in the preheated oven.
- Cook for 4 hours, or until the pork is tender and easily shredded with a fork.
- Once cooked, remove the pork from the pot and let it rest for a few minutes before shredding it with two forks.
- Mix the shredded pork with the remaining 50 grams of sugar-free barbecue sauce and serve warm.
