Ingredients

  • Pork loin cutlets - 400 grams
  • Almond flour - 100 grams
  • Parmesan cheese, grated - 30 grams
  • Eggs - 2 large
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 4 tablespoons
  • Fresh parsley, chopped - 2 tablespoons (for garnish)

Steps

  1. Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. In a shallow bowl, combine the almond flour, grated Parmesan cheese, garlic powder, onion powder, paprika, salt, and black pepper.
  3. In another shallow bowl, beat the eggs until well combined.
  4. Pound the pork loin cutlets to an even thickness of about 1 cm (0.4 inches) using a meat mallet or rolling pin.
  5. Dip each pork cutlet into the beaten eggs, allowing excess to drip off, then coat it thoroughly in the almond flour mixture, pressing lightly to adhere.
  6. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Once hot, add the breaded pork cutlets and cook for about 3-4 minutes on each side until golden brown and cooked through.
  7. Transfer the cooked schnitzels to the prepared baking sheet and drizzle with the remaining 2 tablespoons of olive oil. Bake in the preheated oven for an additional 5-7 minutes to ensure crispiness.
