Steps
- Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
- In a shallow bowl, combine the almond flour, grated Parmesan cheese, garlic powder, onion powder, paprika, salt, and black pepper.
- In another shallow bowl, beat the eggs until well combined.
- Pound the pork loin cutlets to an even thickness of about 1 cm (0.4 inches) using a meat mallet or rolling pin.
- Dip each pork cutlet into the beaten eggs, allowing excess to drip off, then coat it thoroughly in the almond flour mixture, pressing lightly to adhere.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Once hot, add the breaded pork cutlets and cook for about 3-4 minutes on each side until golden brown and cooked through.
- Transfer the cooked schnitzels to the prepared baking sheet and drizzle with the remaining 2 tablespoons of olive oil. Bake in the preheated oven for an additional 5-7 minutes to ensure crispiness.
