- Pork tenderloin - 200 grams, diced
- Cauliflower rice - 2 cups (about 300 grams)
- Eggs - 2 large, beaten
- Green onions - 2 stalks, chopped
- Bell pepper - 1/2 cup, diced
- Soy sauce (low sodium) - 2 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Heat olive oil in a large skillet over medium-high heat.
- Add the diced pork tenderloin and season with salt and black pepper. Cook until browned and cooked through, about 5-7 minutes.
- Remove the pork from the skillet and set aside.
- In the same skillet, add garlic and ginger, and sauté for about 30 seconds until fragrant.
- Add the diced bell pepper and cook for another 2-3 minutes until slightly softened.
- Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Scramble until fully cooked, then mix with the vegetables.
- Stir in the cauliflower rice and cooked pork, mixing everything together.
- Add soy sauce and sesame oil, stirring well to combine. Cook for another 5 minutes, allowing the cauliflower rice to heat through.
- Add chopped green onions and mix well before removing from heat.
