Ingredients

  • Pork tenderloin - 200 grams, diced
  • Cauliflower rice - 2 cups (about 300 grams)
  • Eggs - 2 large, beaten
  • Green onions - 2 stalks, chopped
  • Bell pepper - 1/2 cup, diced
  • Soy sauce (low sodium) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the diced pork tenderloin and season with salt and black pepper. Cook until browned and cooked through, about 5-7 minutes.
  3. Remove the pork from the skillet and set aside.
  4. In the same skillet, add garlic and ginger, and sauté for about 30 seconds until fragrant.
  5. Add the diced bell pepper and cook for another 2-3 minutes until slightly softened.
  6. Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Scramble until fully cooked, then mix with the vegetables.
  7. Stir in the cauliflower rice and cooked pork, mixing everything together.
  8. Add soy sauce and sesame oil, stirring well to combine. Cook for another 5 minutes, allowing the cauliflower rice to heat through.
  9. Add chopped green onions and mix well before removing from heat.
