Ingredients

  • Pork chops - 2 (about 200g each)
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Dried thyme - 1/2 teaspoon
  • Mushrooms - 150g, sliced
  • Heavy cream - 100ml
  • Garlic - 2 cloves, minced
  • Parmesan cheese - 30g, grated
  • Fresh parsley - for garnish

Steps

  1. Pat the pork chops dry with paper towels and season both sides with salt, black pepper, garlic powder, and dried thyme.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Once hot, add the pork chops and sear for about 4-5 minutes on each side until they are golden brown and cooked through. Remove from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of olive oil and the sliced mushrooms. Sauté for about 5 minutes until the mushrooms are browned and tender.
  4. Add minced garlic to the mushrooms and cook for an additional minute until fragrant.
  5. Pour in the heavy cream and bring to a gentle simmer. Stir in the grated parmesan cheese and let the sauce thicken for about 2-3 minutes.
  6. Return the pork chops to the skillet, spooning the sauce over them to coat. Cook for an additional 1-2 minutes to heat through.
  7. Garnish with fresh parsley and serve immediately, ideally with sautéed greens or a salad.
