  • Pork belly - 500 grams
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Garlic powder - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Soy sauce (or tamari for gluten-free) - 2 tablespoons
  • Erythritol (or preferred keto sweetener) - 1 tablespoon
  • Apple cider vinegar - 1 tablespoon
  • Fresh thyme - 1 teaspoon

Steps

  1. Preheat the oven to 150°C (300°F).
  2. Score the skin of the pork belly in a crosshatch pattern, being careful not to cut into the meat.
  3. In a small bowl, mix together salt, black pepper, garlic powder, smoked paprika, and olive oil to create a seasoning paste.
  4. Rub the seasoning paste all over the pork belly, ensuring it gets into the scored skin.
  5. Place the pork belly on a wire rack in a baking dish, skin side up, and roast in the preheated oven for 90 minutes.
  6. In a separate bowl, whisk together soy sauce, erythritol, apple cider vinegar, and thyme to make a glaze.
  7. After 90 minutes, increase the oven temperature to 220°C (425°F) and brush the glaze over the pork belly.
  8. Return the pork belly to the oven and roast for an additional 30 minutes or until the skin is crispy and golden brown.
  9. Remove from the oven and let it rest for 10 minutes before slicing and serving.
