- Erythritol (or preferred keto sweetener) - 1 tablespoon
- Apple cider vinegar - 1 tablespoon
- Fresh thyme - 1 teaspoon
Steps
- Preheat the oven to 150°C (300°F).
- Score the skin of the pork belly in a crosshatch pattern, being careful not to cut into the meat.
- In a small bowl, mix together salt, black pepper, garlic powder, smoked paprika, and olive oil to create a seasoning paste.
- Rub the seasoning paste all over the pork belly, ensuring it gets into the scored skin.
- Place the pork belly on a wire rack in a baking dish, skin side up, and roast in the preheated oven for 90 minutes.
