- Pine nuts - 2 tablespoons (about 30g)
- Parmesan cheese - 30g (grated)
- Garlic - 1 clove
- Olive oil - 4 tablespoons (60ml)
- Salt - 1/4 teaspoon
- Black pepper - to taste
Steps
- Spiralize the zucchini using a spiralizer or a vegetable peeler to create zoodles.
- In a food processor, combine the basil leaves, pine nuts, Parmesan cheese, garlic, salt, and black pepper.
- While blending, gradually add the olive oil until the pesto reaches a smooth consistency.
- In a large skillet, heat a drizzle of olive oil over medium heat and add the zoodles.
- Sauté the zoodles for 2-3 minutes until just tender, stirring occasionally.
