Ingredients

  • Zucchini - 2 medium (about 400g)
  • Fresh basil leaves - 1 cup (packed, about 30g)
  • Pine nuts - 2 tablespoons (about 30g)
  • Parmesan cheese - 30g (grated)
  • Garlic - 1 clove
  • Olive oil - 4 tablespoons (60ml)
  • Salt - 1/4 teaspoon
  • Black pepper - to taste

Steps

  1. Spiralize the zucchini using a spiralizer or a vegetable peeler to create zoodles.
  2. In a food processor, combine the basil leaves, pine nuts, Parmesan cheese, garlic, salt, and black pepper.
  3. While blending, gradually add the olive oil until the pesto reaches a smooth consistency.
  4. In a large skillet, heat a drizzle of olive oil over medium heat and add the zoodles.
  5. Sauté the zoodles for 2-3 minutes until just tender, stirring occasionally.
  6. Remove the skillet from heat and toss the zoodles with the prepared pesto until well coated.
  7. Serve immediately, garnished with extra Parmesan cheese and pine nuts if desired.
