Ingredients

  • Zucchini - 2 medium-sized
  • Fresh basil leaves - 50 grams
  • Pine nuts - 30 grams
  • Parmesan cheese (grated) - 30 grams
  • Garlic - 1 clove
  • Olive oil - 60 ml
  • Salt - to taste
  • Black pepper - to taste
  • Cherry tomatoes - 100 grams (optional for garnish)

Steps

  1. Spiralize the zucchini using a spiralizer to create zoodles and set aside.
  2. In a food processor, combine the basil leaves, pine nuts, garlic, and Parmesan cheese. Pulse until finely chopped.
  3. While the food processor is running, slowly drizzle in the olive oil until the mixture is smooth and creamy. Season with salt and black pepper to taste.
