Ingredients

  • Chicken breasts - 2 pieces (about 300g each)
  • Fresh basil leaves - 50g
  • Parmesan cheese - 30g, grated
  • Pine nuts - 20g
  • Garlic - 1 clove
  • Olive oil - 60ml
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cherry tomatoes - 100g, halved (optional for garnish)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a food processor, combine the basil leaves, Parmesan cheese, pine nuts, garlic, salt, and black pepper.
  3. While the processor is running, slowly drizzle in the olive oil until the mixture is smooth and well combined.
  4. Place the chicken breasts in a baking dish and generously spread the pesto sauce over the top of each breast.
  5. Bake in the preheated oven for 20-25 minutes or until the chicken is cooked through and has reached an internal temperature of 75°C (165°F).
  6. If using, add the halved cherry tomatoes to the baking dish for the last 5 minutes of cooking.
  7. Remove from the oven and let rest for a few minutes before serving.
