- Chicken breasts - 2 pieces (about 300g each)
- Fresh basil leaves - 50g
- Parmesan cheese - 30g, grated
- Pine nuts - 20g
- Garlic - 1 clove
- Olive oil - 60ml
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cherry tomatoes - 100g, halved (optional for garnish)
Steps
- Preheat your oven to 200°C (400°F).
- In a food processor, combine the basil leaves, Parmesan cheese, pine nuts, garlic, salt, and black pepper.
- While the processor is running, slowly drizzle in the olive oil until the mixture is smooth and well combined.
- Place the chicken breasts in a baking dish and generously spread the pesto sauce over the top of each breast.
- Bake in the preheated oven for 20-25 minutes or until the chicken is cooked through and has reached an internal temperature of 75°C (165°F).
- If using, add the halved cherry tomatoes to the baking dish for the last 5 minutes of cooking.
- Remove from the oven and let rest for a few minutes before serving.
