Ingredients

  • Almond flour - 120 grams
  • Cream cheese - 60 grams, softened
  • Eggs - 2 large
  • Baking powder - 1 teaspoon
  • Vanilla extract - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Butter - for cooking

Steps

  1. In a mixing bowl, combine the softened cream cheese and eggs, and whisk until smooth.
  2. Add the almond flour, baking powder, vanilla extract, and salt to the bowl, and mix until well combined.
  3. Heat a non-stick skillet over medium heat and add a small amount of butter to coat the surface.
  4. Pour about 1/4 cup of the batter for each pancake onto the skillet, and cook for 2-3 minutes until bubbles form on the surface.
  5. Flip the pancakes and cook for an additional 2-3 minutes until golden brown.
  6. Remove the pancakes from the skillet and keep warm while you repeat with the remaining batter.
  7. Serve warm with your favorite low-carb syrup or toppings.
