Ingredients

  • Cauliflower - 300 grams, grated
  • Olive oil - 2 tablespoons
  • Red bell pepper - 1 medium, diced
  • Green bell pepper - 1 medium, diced
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime juice - 1 tablespoon

Steps

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and sauté for 2-3 minutes until translucent.
  3. Stir in minced garlic, diced red and green bell peppers, and cook for another 3-4 minutes until softened.
  4. Add the grated cauliflower to the skillet, mixing it well with the vegetables.
  5. Sprinkle in cumin, chili powder, salt, and black pepper. Stir to combine and cook for about 5-7 minutes, until the cauliflower is tender.
  6. Remove from heat and stir in chopped cilantro and lime juice before serving.
