Ingredients

  • Cauliflower Rice - 300 grams
  • Olive Oil - 2 tablespoons
  • Chicken Breast - 200 grams, diced
  • Cherry Tomatoes - 100 grams, halved
  • Cucumber - 100 grams, diced
  • Kalamata Olives - 50 grams, pitted and sliced
  • Feta Cheese - 50 grams, crumbled
  • Red Onion - 30 grams, thinly sliced
  • Garlic Powder - 1 teaspoon
  • Dried Oregano - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste
  • Fresh Parsley - for garnish

Steps

  1. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the diced chicken breast, season with garlic powder, oregano, salt, and pepper. Cook until the chicken is browned and cooked through, about 8-10 minutes.
  2. While the chicken is cooking, prepare the cauliflower rice according to package instructions or by pulsing cauliflower florets in a food processor until rice-sized. Sauté the cauliflower rice in another skillet with the remaining tablespoon of olive oil for about 5 minutes until tender.
  3. In a mixing bowl, combine the cherry tomatoes, cucumber, Kalamata olives, red onion, and feta cheese. Drizzle with a little olive oil and season with salt and pepper to taste.
  4. To assemble the bowls, divide the cauliflower rice between two bowls, top with the cooked chicken, and the vegetable mixture. Garnish with fresh parsley and serve immediately.
