- Cauliflower Rice - 300 grams
- Olive Oil - 2 tablespoons
- Chicken Breast - 200 grams, diced
- Cherry Tomatoes - 100 grams, halved
- Cucumber - 100 grams, diced
- Kalamata Olives - 50 grams, pitted and sliced
- Feta Cheese - 50 grams, crumbled
- Red Onion - 30 grams, thinly sliced
- Garlic Powder - 1 teaspoon
- Dried Oregano - 1 teaspoon
- Salt - to taste
- Pepper - to taste
- Fresh Parsley - for garnish
Steps
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the diced chicken breast, season with garlic powder, oregano, salt, and pepper. Cook until the chicken is browned and cooked through, about 8-10 minutes.
- While the chicken is cooking, prepare the cauliflower rice according to package instructions or by pulsing cauliflower florets in a food processor until rice-sized. Sauté the cauliflower rice in another skillet with the remaining tablespoon of olive oil for about 5 minutes until tender.
