Ingredients

  • Ground beef (80/20) - 300 grams
  • Almond flour - 30 grams
  • Egg - 1 large
  • Parmesan cheese, grated - 30 grams
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Oregano - 1/2 teaspoon
  • Marinara sauce (low-carb) - 120 ml
  • Mozzarella cheese, shredded - 60 grams
  • Olive oil - 1 tablespoon
  • Fresh parsley, chopped - for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large mixing bowl, combine ground beef, almond flour, egg, Parmesan cheese, garlic powder, onion powder, salt, black pepper, and oregano. Mix until well incorporated.
  3. Form the mixture into 12 small meatballs, approximately 25 grams each.
  4. Place the meatballs on a baking sheet lined with parchment paper and drizzle with olive oil.
  5. Bake in the preheated oven for 15-20 minutes, or until cooked through and browned.
  6. While the meatballs are baking, heat the marinara sauce in a saucepan over medium heat.
  7. Once the meatballs are done, remove them from the oven and place them in the saucepan with marinara sauce. Simmer for 2-3 minutes.
  8. To assemble the subs, place 6 meatballs on each plate, ladle some marinara sauce over the top, and sprinkle with shredded mozzarella cheese.
  9. Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
  10. Garnish with chopped parsley before serving.
