Ingredients
- Ground beef (80/20) - 300 grams
- Almond flour - 30 grams
- Egg - 1 large
- Parmesan cheese, grated - 30 grams
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Oregano - 1/2 teaspoon
- Marinara sauce (low-carb) - 120 ml
- Mozzarella cheese, shredded - 60 grams
- Olive oil - 1 tablespoon
- Fresh parsley, chopped - for garnish
Steps
- Preheat the oven to 200°C (400°F).
- In a large mixing bowl, combine ground beef, almond flour, egg, Parmesan cheese, garlic powder, onion powder, salt, black pepper, and oregano. Mix until well incorporated.
- Form the mixture into 12 small meatballs, approximately 25 grams each.
- Place the meatballs on a baking sheet lined with parchment paper and drizzle with olive oil.
- Bake in the preheated oven for 15-20 minutes, or until cooked through and browned.
- While the meatballs are baking, heat the marinara sauce in a saucepan over medium heat.
- Once the meatballs are done, remove them from the oven and place them in the saucepan with marinara sauce. Simmer for 2-3 minutes.
- To assemble the subs, place 6 meatballs on each plate, ladle some marinara sauce over the top, and sprinkle with shredded mozzarella cheese.
- Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
- Garnish with chopped parsley before serving.
