- Lobster meat - 200 grams, chopped
- Butter - 2 tablespoons
- Shallots - 2, finely chopped
- Garlic - 2 cloves, minced
- Cognac - 1 tablespoon
- Chicken broth - 500 ml
- Heavy cream - 100 ml
- Tomato paste - 1 tablespoon
- Paprika - 1 teaspoon
- Dried thyme - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a large saucepan, melt the butter over medium heat. Add the shallots and garlic, sautéing until translucent.
- Deglaze the pan with cognac and let it simmer for 1-2 minutes until the alcohol evaporates.
- Stir in the tomato paste, paprika, and dried thyme, cooking for an additional 1 minute.
- Pour in the chicken broth and bring to a gentle simmer for about 10 minutes.
- Using an immersion blender, blend the soup until smooth. If you don't have an immersion blender, carefully transfer the soup in batches to a regular blender.
- Return the blended soup to the saucepan and stir in the heavy cream. Simmer on low heat for another 5 minutes.
- Add the chopped lobster meat and cook until heated through, about 2-3 minutes.
- Season with salt and black pepper to taste. Serve hot, garnished with fresh parsley.
