Ingredients

  • Lobster meat - 200 grams, chopped
  • Butter - 2 tablespoons
  • Shallots - 2, finely chopped
  • Garlic - 2 cloves, minced
  • Cognac - 1 tablespoon
  • Chicken broth - 500 ml
  • Heavy cream - 100 ml
  • Tomato paste - 1 tablespoon
  • Paprika - 1 teaspoon
  • Dried thyme - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a large saucepan, melt the butter over medium heat. Add the shallots and garlic, sautéing until translucent.
  2. Deglaze the pan with cognac and let it simmer for 1-2 minutes until the alcohol evaporates.
  3. Stir in the tomato paste, paprika, and dried thyme, cooking for an additional 1 minute.
  4. Pour in the chicken broth and bring to a gentle simmer for about 10 minutes.
  5. Using an immersion blender, blend the soup until smooth. If you don't have an immersion blender, carefully transfer the soup in batches to a regular blender.
  6. Return the blended soup to the saucepan and stir in the heavy cream. Simmer on low heat for another 5 minutes.
  7. Add the chopped lobster meat and cook until heated through, about 2-3 minutes.
  8. Season with salt and black pepper to taste. Serve hot, garnished with fresh parsley.
