Ingredients
- Zucchini - 2 medium
- Ricotta cheese - 250 grams
- Mozzarella cheese - 100 grams, shredded
- Parmesan cheese - 50 grams, grated
- Egg - 1 large
- Spinach - 100 grams, fresh
- Marinara sauce - 200 grams (sugar-free)
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Italian seasoning - 1 teaspoon
Steps
- Preheat the oven to 180°C (350°F).
- Slice the zucchini lengthwise into thin strips using a mandoline or a sharp knife, creating about 8 strips.
- Sprinkle the zucchini slices with salt and let them sit for 10 minutes to draw out excess moisture.
- In a skillet, heat olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute. Add the fresh spinach and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
- In a mixing bowl, combine the ricotta cheese, half of the shredded mozzarella, grated Parmesan, egg, sautéed spinach, Italian seasoning, salt, and black pepper. Mix until well combined.
- Pat the zucchini strips dry with paper towels to remove excess moisture.
- Spread about 2 tablespoons of the cheese mixture onto each zucchini strip and roll them up tightly. Place the roll-ups seam-side down in a baking dish.
- Pour the marinara sauce evenly over the roll-ups and sprinkle the remaining mozzarella cheese on top.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden.
