Ingredients

  • Zucchini - 2 medium
  • Ricotta cheese - 250 grams
  • Mozzarella cheese - 100 grams, shredded
  • Parmesan cheese - 50 grams, grated
  • Egg - 1 large
  • Spinach - 100 grams, fresh
  • Marinara sauce - 200 grams (sugar-free)
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Italian seasoning - 1 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Slice the zucchini lengthwise into thin strips using a mandoline or a sharp knife, creating about 8 strips.
  3. Sprinkle the zucchini slices with salt and let them sit for 10 minutes to draw out excess moisture.
  4. In a skillet, heat olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute. Add the fresh spinach and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
  5. In a mixing bowl, combine the ricotta cheese, half of the shredded mozzarella, grated Parmesan, egg, sautéed spinach, Italian seasoning, salt, and black pepper. Mix until well combined.
  6. Pat the zucchini strips dry with paper towels to remove excess moisture.
  7. Spread about 2 tablespoons of the cheese mixture onto each zucchini strip and roll them up tightly. Place the roll-ups seam-side down in a baking dish.
  8. Pour the marinara sauce evenly over the roll-ups and sprinkle the remaining mozzarella cheese on top.
  9. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  10. Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden.
