- Olive oil - 2 tablespoons
- Andouille sausage - 150 grams, sliced
- Shrimp - 200 grams, peeled and deveined
- Bell pepper - 1 medium, diced
- Celery - 1 stalk, diced
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Canned diced tomatoes - 200 grams
- Cauliflower rice - 300 grams
- Chicken broth - 250 ml
- Paprika - 1 teaspoon
- Cayenne pepper - 1/4 teaspoon
- Dried thyme - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Parsley - for garnish
Steps
- Heat olive oil in a large skillet over medium heat.
- Add the sliced andouille sausage and cook until browned, about 5 minutes.
- Add the diced onion, bell pepper, and celery to the skillet. Sauté for another 5 minutes until the vegetables are soft.
- Stir in the minced garlic, paprika, cayenne pepper, thyme, salt, and black pepper. Cook for 1 minute until fragrant.
- Add the canned diced tomatoes and chicken broth to the skillet, stirring to combine.
- Bring the mixture to a simmer and then add the cauliflower rice. Stir well.
- Cover and cook for 10-12 minutes, or until the cauliflower rice is tender.
- Add the shrimp to the skillet and cook for an additional 3-5 minutes until they are pink and cooked through.
- Adjust seasoning if necessary and remove from heat.
- Garnish with chopped parsley before serving.
