  • Olive oil - 2 tablespoons (30ml)
  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 200g, halved
  • Heavy cream - 100ml
  • Parmesan cheese - 30g, grated
  • Italian seasoning - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil - a handful, chopped (optional)

Steps

  1. Spiralize the zucchini using a spiralizer or julienne peeler to create zucchini noodles. Set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the Italian sausage and cook until browned and cooked through, breaking it up with a spatula, about 5-7 minutes.
  3. Add the minced garlic to the skillet and sauté for an additional 1-2 minutes until fragrant.
  4. Stir in the cherry tomatoes and cook for about 5 minutes until they start to soften.
