- Garlic - 2 cloves, minced
- Cherry tomatoes - 200g, halved
- Heavy cream - 100ml
- Parmesan cheese - 30g, grated
- Italian seasoning - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh basil - a handful, chopped (optional)
Steps
- Spiralize the zucchini using a spiralizer or julienne peeler to create zucchini noodles. Set aside.
- In a large skillet, heat the olive oil over medium heat. Add the Italian sausage and cook until browned and cooked through, breaking it up with a spatula, about 5-7 minutes.
- Add the minced garlic to the skillet and sauté for an additional 1-2 minutes until fragrant.
- Stir in the cherry tomatoes and cook for about 5 minutes until they start to soften.
- Pour in the heavy cream and sprinkle the Italian seasoning, salt, and black pepper. Stir to combine and let it simmer for 2-3 minutes until slightly thickened.
