Ingredients

  • Riced cauliflower - 300 grams
  • Breakfast sausage - 200 grams, casings removed
  • Eggs - 2 large
  • Heavy cream - 120 ml
  • Cheddar cheese - 100 grams, shredded
  • Green onions - 2 stalks, chopped
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet over medium heat, add the olive oil and breakfast sausage. Cook until browned and fully cooked, breaking it apart with a spatula, about 5-7 minutes.
  3. In a large bowl, combine the riced cauliflower, cooked sausage, eggs, heavy cream, half of the cheddar cheese, green onions, garlic powder, onion powder, salt, and black pepper. Mix well until all ingredients are evenly combined.
  4. Transfer the mixture into a greased baking dish (approximately 20cm x 20cm) and spread it out evenly.
  5. Top the casserole with the remaining cheddar cheese.
  6. Bake in the preheated oven for 25-30 minutes, or until the cheese is golden and bubbly.
  7. Remove from the oven and let it cool for a few minutes before slicing and serving.
