Ingredients

  • Shirataki noodles - 200 grams
  • Cherry tomatoes - 100 grams, halved
  • Cucumber - 100 grams, diced
  • Red onion - 50 grams, finely chopped
  • Kalamata olives - 50 grams, pitted and halved
  • Feta cheese - 75 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Red wine vinegar - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the Shirataki noodles under cold water and drain them well.
  2. In a large bowl, combine the halved cherry tomatoes, diced cucumber, chopped red onion, Kalamata olives, and crumbled feta cheese.
