Ingredients

  • Large eggs - 4
  • Avocado - 1 medium
  • Canadian bacon - 4 slices
  • Unsalted butter - 100 grams
  • Egg yolks - 2
  • Lemon juice - 1 tablespoon
  • Dijon mustard - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Water - for poaching

Steps

  1. Fill a saucepan with water and bring it to a gentle simmer. Add a splash of vinegar if desired to help the eggs hold their shape.
  2. While the water heats, cook the Canadian bacon in a skillet over medium heat until crispy, about 3-4 minutes per side. Set aside.
  3. Cut the avocado in half, remove the pit, and slice the flesh. Set aside.
  4. In a heatproof bowl, melt the butter. In a separate bowl, whisk the egg yolks, lemon juice, and Dijon mustard until well combined.
