- Canadian bacon - 4 slices

- Egg yolks - 2

- Black pepper - to taste

Steps
- Fill a saucepan with water and bring it to a gentle simmer. Add a splash of vinegar if desired to help the eggs hold their shape.
- While the water heats, cook the Canadian bacon in a skillet over medium heat until crispy, about 3-4 minutes per side. Set aside.
- Cut the avocado in half, remove the pit, and slice the flesh. Set aside.
