Ingredients

  • Eggplant - 1 large
  • Ricotta cheese - 200 grams
  • Mozzarella cheese (shredded) - 100 grams
  • Parmesan cheese (grated) - 50 grams
  • Egg - 1 large
  • Fresh spinach - 50 grams
  • Garlic (minced) - 2 cloves
  • Olive oil - 2 tablespoons
  • Marinara sauce (sugar-free) - 200 grams
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Dried oregano - 1 teaspoon
  • Fresh basil (chopped) - 2 tablespoons

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Slice the eggplant lengthwise into thin strips, about 5 mm thick. Sprinkle with salt and let sit for 15 minutes to draw out moisture.
  3. Rinse the eggplant slices and pat them dry with paper towels. Brush both sides with olive oil and arrange them on a baking sheet.
  4. Roast the eggplant in the preheated oven for 20 minutes, flipping halfway through until tender and slightly golden.
  5. In a mixing bowl, combine ricotta cheese, half of the mozzarella, Parmesan cheese, egg, fresh spinach, minced garlic, black pepper, oregano, and fresh basil. Mix until well combined.
  6. Spread a thin layer of marinara sauce on the bottom of a baking dish.
  7. Take a roasted eggplant slice, place a generous spoonful of the ricotta mixture at one end, and roll it up tightly. Place the roll seam-side down in the baking dish. Repeat with remaining eggplant slices.
  8. Cover the eggplant rolls with the remaining marinara sauce and sprinkle the rest of the mozzarella cheese on top.
  9. Bake in the oven for an additional 15-20 minutes until heated through and the cheese is melted and bubbly.
  10. Let cool for a few minutes before serving.
