- Eggplant - 1 large
- Ricotta cheese - 200 grams
- Mozzarella cheese (shredded) - 100 grams
- Parmesan cheese (grated) - 50 grams
- Egg - 1 large
- Fresh spinach - 50 grams
- Garlic (minced) - 2 cloves
- Olive oil - 2 tablespoons
- Marinara sauce (sugar-free) - 200 grams
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Dried oregano - 1 teaspoon
- Fresh basil (chopped) - 2 tablespoons
Steps
- Preheat the oven to 200°C (400°F).
- Slice the eggplant lengthwise into thin strips, about 5 mm thick. Sprinkle with salt and let sit for 15 minutes to draw out moisture.
- Rinse the eggplant slices and pat them dry with paper towels. Brush both sides with olive oil and arrange them on a baking sheet.
- Roast the eggplant in the preheated oven for 20 minutes, flipping halfway through until tender and slightly golden.
- In a mixing bowl, combine ricotta cheese, half of the mozzarella, Parmesan cheese, egg, fresh spinach, minced garlic, black pepper, oregano, and fresh basil. Mix until well combined.
- Spread a thin layer of marinara sauce on the bottom of a baking dish.
- Take a roasted eggplant slice, place a generous spoonful of the ricotta mixture at one end, and roll it up tightly. Place the roll seam-side down in the baking dish. Repeat with remaining eggplant slices.
- Cover the eggplant rolls with the remaining marinara sauce and sprinkle the rest of the mozzarella cheese on top.
- Bake in the oven for an additional 15-20 minutes until heated through and the cheese is melted and bubbly.
- Let cool for a few minutes before serving.
