Ingredients

  • Eggplant - 1 medium
  • Olive oil - 2 tablespoons
  • Ground beef - 250 grams
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Marinara sauce - 200 grams (sugar-free)
  • Ricotta cheese - 100 grams
  • Mozzarella cheese - 100 grams, shredded
  • Parmesan cheese - 30 grams, grated
  • Italian seasoning - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil - for garnish (optional)

Steps

  1. Preheat the oven to 190°C (375°F).
  2. Slice the eggplant into 1/4 inch thick slices and sprinkle with salt. Let them sit for about 15 minutes to draw out moisture, then pat dry.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add diced onion and minced garlic, sauté until translucent.
  4. Add the ground beef to the skillet and cook until browned. Drain excess fat, then stir in the marinara sauce and Italian seasoning. Simmer for 5 minutes.
  5. In a bowl, combine ricotta cheese, half of the mozzarella cheese, grated Parmesan, salt, and pepper. Mix well.
  6. In a baking dish, spread a thin layer of the meat sauce on the bottom. Layer half of the eggplant slices over the sauce, followed by half of the ricotta mixture, then half of the meat sauce again. Repeat the layers.
  7. Top the lasagna with the remaining mozzarella cheese.
  8. Cover the baking dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 10-15 minutes or until the cheese is bubbly and golden.
  9. Allow to cool for a few minutes before serving. Garnish with fresh basil if desired.
