- Cauliflower rice - 200g
- Eggs - 3 large
- Green onions - 2 stalks, chopped
- Red bell pepper - 50g, diced
- Carrots - 50g, diced
- Soy sauce (or tamari for gluten-free) - 2 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Salt - to taste
- Black pepper - to taste
- Olive oil - 1 tablespoon
Steps
- Heat olive oil in a large skillet over medium heat.
- Add minced garlic and ginger, and sauté for 1-2 minutes until fragrant.
- Add diced red bell pepper and carrots, cooking for another 3-4 minutes until slightly tender.
- Stir in the cauliflower rice and cook for about 5 minutes, stirring occasionally, until heated through.
- Push the rice mixture to one side of the skillet and crack the eggs into the empty space. Scramble the eggs until fully cooked.
- Combine the scrambled eggs with the cauliflower rice and vegetables, mixing well.
- Add soy sauce, sesame oil, chopped green onions, salt, and black pepper. Mix until everything is evenly coated and heated through.
- Serve warm, garnished with extra green onions if desired.
