Ingredients

  • Cauliflower rice - 200g
  • Eggs - 3 large
  • Green onions - 2 stalks, chopped
  • Red bell pepper - 50g, diced
  • Carrots - 50g, diced
  • Soy sauce (or tamari for gluten-free) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Salt - to taste
  • Black pepper - to taste
  • Olive oil - 1 tablespoon

Steps

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and ginger, and sauté for 1-2 minutes until fragrant.
  3. Add diced red bell pepper and carrots, cooking for another 3-4 minutes until slightly tender.
  4. Stir in the cauliflower rice and cook for about 5 minutes, stirring occasionally, until heated through.
  5. Push the rice mixture to one side of the skillet and crack the eggs into the empty space. Scramble the eggs until fully cooked.
  6. Combine the scrambled eggs with the cauliflower rice and vegetables, mixing well.
  7. Add soy sauce, sesame oil, chopped green onions, salt, and black pepper. Mix until everything is evenly coated and heated through.
  8. Serve warm, garnished with extra green onions if desired.
