Ingredients
- large eggs - 4
- mayonnaise - 4 tablespoons
- Dijon mustard - 1 teaspoon
- apple cider vinegar - 1 teaspoon
- salt - 1/4 teaspoon
- black pepper - 1/8 teaspoon
- paprika - 1/4 teaspoon
- chives - 1 tablespoon, finely chopped
Steps
- Place the eggs in a saucepan and cover them with water. Bring to a boil over medium heat.
- Once boiling, cover the saucepan and remove it from heat. Let the eggs sit in the hot water for 10-12 minutes.
- Carefully remove the eggs from the hot water and transfer them to an ice bath for 5 minutes to cool.
- Peel the cooled eggs and slice them in half lengthwise. Remove the yolks and place them in a mixing bowl.
- Mash the yolks with a fork and add mayonnaise, Dijon mustard, apple cider vinegar, salt, black pepper, and paprika. Mix until smooth and well combined.
- Spoon or pipe the yolk mixture back into the egg white halves.
- Garnish with chopped chives and a sprinkle of paprika before serving.
