Ingredients

  • large eggs - 4
  • mayonnaise - 4 tablespoons
  • Dijon mustard - 1 teaspoon
  • apple cider vinegar - 1 teaspoon
  • salt - 1/4 teaspoon
  • black pepper - 1/8 teaspoon
  • paprika - 1/4 teaspoon
  • chives - 1 tablespoon, finely chopped

Steps

  1. Place the eggs in a saucepan and cover them with water. Bring to a boil over medium heat.
  2. Once boiling, cover the saucepan and remove it from heat. Let the eggs sit in the hot water for 10-12 minutes.
  3. Carefully remove the eggs from the hot water and transfer them to an ice bath for 5 minutes to cool.
  4. Peel the cooled eggs and slice them in half lengthwise. Remove the yolks and place them in a mixing bowl.
  5. Mash the yolks with a fork and add mayonnaise, Dijon mustard, apple cider vinegar, salt, black pepper, and paprika. Mix until smooth and well combined.
  6. Spoon or pipe the yolk mixture back into the egg white halves.
  7. Garnish with chopped chives and a sprinkle of paprika before serving.
